Egg yolk powder is a good source of vitamins, but it’s not the best. Egg yolks contain many of the B-vitamins: thiamin (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5), pyridoxine (B6) and biotin (B7). They also have minerals, such as phosphorus and magnesium. Additionally, egg yolks are packed with Vitamin A and D, both vital for healthy bones, skin and vision.

While these nutrients all come from an egg yolk in its wholefood form, egg yolk powder may be missing some of the key components needed to derive those benefits. For example, while using enriched egg yolk powder may result in the addition of certain B vitamins into recipes, most powders don't contain sufficient amounts of essential fatty acids, which act as carriers for vitamins like A, E and K2. Nor do they contain much Vitamin C—a key nutrient needed to help absorb iron and other minerals.

Ultimately, while egg yolk powder can be used as a source of some vitamins, you'd be better off opting for the real thing when possible.
